One last recipe: Miss Perham prepares to pass on her crown
This past year I have had the honor and privilege of representing such an amazing, supportive community.
I would like to start off my final column by thanking everyone in the community who has supported me throughout my journey as Miss Perham.
I would like to personally thank Dan Schroeder at the Perham Chamber of Commerce, who has helped open many doors for me this past year. Whether it was welcoming me to Turtle Races, having me attend Power Hour meetings with local business leaders, or helping me get involved with community events, he has always been a strong supporter of the Miss Perham title.
To everyone who has supported me through financial donations for the Gillette’s Children’s Hospital, given me phone calls or letters of support, or just a few kind words as I was out and about in the community, thank you.
As a titleholder in the Miss America organization, I not only have the opportunity to let my life impact others, but more importantly, I am given the honor of meeting individuals who impact my own life.
Down in the Twin Cities for Miss Minnesota Week recently, I had the opportunity to attend many service projects in Minneapolis. My most memorable of these was attending the Gillette Children’s Hospital. Words cannot express what I was able to see there. Not only did I learn about the work they do there, but I was able to meet with patients, frost and decorate cookies with kids, and watch a back brace for a teen be created. If you ever have a chance to donate to their hospital, volunteer, or just tour their facility, I highly recommend it.
Since I plan on working in a children’s hospital, I was inspired to be around people not only treating these children’s conditions, but to see the passion the staff there has in working to just simply make a child smile.
For my final recipe, I have chosen one of my favorite appetizers – Cowboy Dip.
1 can black beans, rinsed and drained
1 can Mexican corn
5-6 green onions chopped
3-4 plum tomatoes diced
1/4 to 1/2 of a red onion diced (to taste)
2 firm avocados
Dressing (mix and pour over diced vegetables, stir well)
1 packet good season Italian Dressings Mix
1/2 cup oil (I use extra light olive)
1/4 cup balsamic vinegar
Serve with corn chips.
