With this cold weather still hanging on, I hope you are finding ways to stay warm and active.

On Saturday, April 6, I will be going down to the Twin Cities to watch our very own Miss Perham’s Outstanding Teen, Lauren Anderson, compete in Miss Minnesota’s Outstanding Teen pageant along with 14 other amazing young women.

This coming month, I have a lot on my plate as Miss Perham. By the end of the month I will have finished sharing the message of my platform, diabetes prevention, at the elementary school, all of the middle school classrooms, and to more than 150 preschool students. I will also be attending the Healthy Schools Summit in Fargo, N.D., and will be giving the introduction to this summit.

With my reign halfway over, I would like to thank all of the community members here who have given me so much support. I have been so blessed to have this opportunity to represent such a loving, caring community.

Please attend the “Dancing with the Stars” fundraising event on Saturday, April 13 at 7:30 p.m. for the American Cancer Society Relay for Life of East Otter Tail County. I, along with five other “stars,” will be paired up with local dancers. Admission is $5 per person, and those attending will have the chance to vote for their favorite dance couple.

Keep an eye out next month for information regarding my Miss Minnesota Send Off. I would love to have as many of you there as possible.

Another event I am inviting you all to attend is a Community Walk to Stop Diabetes. It is a 5K Run/Walk that I will be hosting at Arvig Park on June 1 to raise funds for the American Diabetes Association. Registration will begin at 7:30 a.m. and the run/walk will start at 9 a.m.

I am extremely excited to be hosting this event, and hope to have more than 100 participants! The walk will cost $20 for those aged 13 and older and $10 for anyone aged 12 and under.

This walk will be eight days before I leave for the Miss Minnesota competition, and I am hopeful for a large turnout, as this will be one of my last events as Miss Perham before I run to become Miss Minnesota. This month I have chosen a Lemon Delight dessert as my recipe. This dessert is light and reminds me of spring and summer, so I hope this treat will help us forget about the snow for a while!

Ingredients:

1/2 cup butter

1 cup flour

3/4 cup sliced almonds

8 oz. cream cheese

1 cup Splenda

3 cups cool whip

2 pkgs. sugar free lemon pudding

3 cups milk

Directions:

Mix butter into flour until mixture resembles coarse meal; stir 1/2 cup almonds into flour mixture. Press flour mixture into 9x13 pan. Bake at 350 degrees for 15 minutes. Combine cream cheese and Splenda, beat until fluffy. Fold 1 cup whipped topping into cream cheese mixture.

Spread over crust; chill. Combine pudding mix and milk; beat 2 minutes at low. Spread pudding over cream cheese layer. Spread remaining cool whip over the pudding layer. Sprinkle with almonds. Chill.
